Bascially one needle stick, an i.v. line. Once the i.v. is started many drugs including anasethesia can be delivered through that, and other procedures, such as urethral catheterization (Foley) can be done while the patient is under. Sometimes another stick needs to be done to take blood measurements or blood gases, but for most patients it is just the i.v.

As you say, that depends upon the operation. The good news is that modern medical needles are so slim and sharp that you may barely feel them being inserted. The pain if any lasts only a second or two. Many blood donors donate frequently and are little bothered by insertion of a needle large enough to draw a pint of blood in less than ten minutes.
